Halloween Sprinkle Cookies

I love to bake! I have not been baking much this year due to different diet restrictions. Today I decided to bake with my 3 year old and these are the cookies he wanted to bake. We had a great time making them. It was great to go back to something I love to do and share my love of baking with my son. I found this recipe here.

Ingredients
  • 3/4 cup of (1 1/2 sticks) salted butter, slightly softened (I used unsalted)
  • 1 cup of sugar
  • 2 eggs
  • 1 teaspoon of vanilla
  • 2 1/2 cups of flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • Glaze:
  • 2 1/2 cups of powdered sugar
  • 1/4 cup of water
  • 1/2 teaspoon of almond extract
  • Holiday sprinkles

Directions
  1. Preheat the oven to 400.
  2.  Lightly grease a large baking sheet and set aside.(I used Pampered Chef Stoneware and did not grease the pans)
  3. In a medium bowl, combine the flour, baking powder, and salt. Set aside.
  4. In a mixing bowl, beat the butter and sugar on medium speed until light and fluffy. Beat for about 3 minutes.
  5. Then add the eggs and vanilla and beat until combined.
  6. Put the mixer on low and slowly add the flour mixture and mix until a smooth dough forms.
  7. Cover the dough and refrigerate for at least one hour.
  8. Roll the dough out to 1/4 inch thick on lightly floured counter.
  9.  Using a 2 1/2 inch round cutter to cut circles out of the dough.
  10. Then place the circles on baking sheet 1 inch apart.
  11. Bake for six minutes. (I found mine took much longer, but they were thicker)
  12.  Remove and let cool completely on wire rack.
  13. Prepare the glaze: In a large bowl, whisk together powdered sugar, water and almond extract until smooth.
  14.  Dip the cookies in the glaze face down, letting the excess drip off. Place the cookie back on a wire rack set over wax paper and sprinkle liberally. Let set for about an hour before serving.
  15. Enjoy!
